Recipe Remix - Banana Pumpkin Bread




Banana Pumpkin Bread
Ingredients:
2 cups of flour (whole wheat or white)
1 tsp baking powder
½ tsp salt
½ cup unsweetened applesauce
1 cup honey (can use half honey, half sugar)
2 eggs at room temperature
1 tsp vanilla
2 medium ripe bananas
½ cup of canned pumpkin
½ cup plain Greek yogurt


Directions:
Preheat oven to 325’
Combine the flour, baking soda, and salt in 1 bowl. Combine the applesauce and honey until creamy, add eggs 1 at a time and vanilla and blend briefly. Peel bananas and mash with a fork measuring out ½ cup, add to applesauce mixture and blend. Add ½ cup of pumpkin to applesauce mixture and blend. Add Greek yogurt to the applesauce mixture and blend. Add the dry mixture to the wet mixture 1/3 at a time until well blended.
You can either make muffins or make a loaf. If you are making muffins cook about 20-25 minutes they are done when you insert a toothpick and it comes out clean. If you are using a loaf tin bake for 70-75 minutes it is done when you insert a toothpick and it comes out clean.

Let cool and enjoy!

The original recipe calls for butter, sugar and sour cream. I hope I cut the calories and fat in half!!

Mind, Body, Spirit

Mind – Body – Spirit
(Posted a day late, sorry) So it’s Sunday, football Sunday might I add, I love Sundays church, family and food or just laying on the couch all day watching football which is what I decided to do today. A lot going on in my mind and in my life, I’m in transition, yet again, not sure what it is but I feel it. God has been breaking me down to build me back up, I pray for patience, I pray for clarity but the truth is whatever he wants to happen, will be. I am just a mere bystander in this life, I have no control. He is in control and I can do nothing apart from Him. But, with Him……. HONEY I can do ALL things. So I wait, to see what He has in store for me.

Mind – We are only as strong as our minds capacity for strength.  We can only handle situations we have been previously equipped to handle. Our lives are constant “training zones” some of us train hard, some of us go home. But, the mind determines the majority of the outcomes. Train up your minds to focus and meditate on the things that are pure, truthful and humble.

Body – Our temple. My focus in the last few years is cooking. Learning how to make a large variety of foods and snacks so that I avoid eating out a lot and I avoid processed foods. If I want cookies I’ll make some. You can keep all the preservatives, additives and dyes I don’t need it. I strive to maintain a healthy weight by eating right and working out in the gym. It is also a great place to clear my mind. 

Spirit – The most important part of them all. Where the body is dying from the time we are born the spirit is alive and will carry us to eternity. Feed your spirit. Make sure you are surrounded by people that edify and encourage your spirit. Ladies, take your time when deciding on men you will allow into your spirit (we all know what this means) because you will live with the thoughts of those men your whole life. Fellas, keep women around who are strong in spirit, for they are best suited to support and encourage you at your most difficult times.

So my daughter made a picture of what she said was me on one of the little websites she plays on and it got me to thinking????

So this is what she thinks of me? Made my heart melt because it's pretty dang close to my look, skin color and style. The most important part, I'm smiling! As long as she perceives me as a happy person that's all that matters to me.  Life is good and I can't complain. Be blessed ya'll!

Summer Time Skin - You GLOW girl!

Summer is here and bronze skin is IN! Less makeup and more NATURAL looks are allowed in the summer. With this heat in Dallas I want the least amount of crap on my skin but, I still want to look flawless. Washing my face just isn’t enough anymore and since I have hit my 30s I have to put more effort into taking care of my skin inside and out.
Fact: The skin is your largest organ
Here are a few tips to keep your skin glowing and fresh
1.       Always WASH you makeup off at night and apply a nighttime moisture and eye cream – this can be something you buy at Walgreens, Sephora or Nieman’s it doesn’t matter. Make sure the wash is formulated for your skin type (dry, oily, combo). If you have oily skin you can also try a oil-free moisture.
2.       Use SUNSCREEN daily. We all need sunscreen I don’t care what your color or skin tone. It protects our skin from damaging UV rays which can cause premature aging.  Try SPF 15 light weight moisture for day, to protect your delicate skin.
3.       EXFOLIATE at least 2x a week.  A light exfoliation will help remove excess dirt and buildup. It will also start the regeneration process of new skin cells. We need new skin cells to keep our skin plump and supple. This process slows as we age and that is why exfoliation is so important.
4.       Find a good ESTHETICIAN, facials, microdermabrasion and light chemical peels are a MUST.  A professional treatment can penetrate the epidermis (top layer) to the dermis (deeper layer, sebaceous glands are there) and attack acne, oil, wrinkles and scares. A treatment plan should be established and followed.
5.       LASTLY keep it light during the day – bronzer, blush, mascara and gloss. Simple and effortless.
Your skin says a lot about what’s going on in the inside. Drink plenty of water, pay attention to the food you are eating. Limit the fast and processed foods, add in more fruits and vegetables. Go to the gym, take a walk SWEAT! It’s a great way to get rid of toxins in your body and open your pores.
